  • 1 cup peeled and sliced carrots
  • ½ cup sliced celery
  • 1 cup sliced onions
  • 2 pounds fresh sliced  brown or white mushrooms
  • 1 teaspoon fresh thyme leaves
  • ½ cup chopped green onion
  • salt and pepper to taste
  • 6 cups chicken stock

we are making mushroom soup. For this, I have taken a pan from here. put the butter in a pot and melt it on low heat. Add vegetables of your choice, like carrots, onions, and celery Cook and stir until vegetables are tender but not dark, cook for at least 10 minutes.  

  Cook the thyme mushrooms until completely wilted, about 50 to 60 minutes, then add chicken stock, season lightly with salt and black pepper, and simmer for about 25 to 30 minutes .and thyme; cook until mushrooms are soft, about 5 minutes. Pour chicken stock into the pot, along with salt and pepper. Cover over low heat for less than 30 minutes.
